Shrimp Scampi

1 lb. Raw Shrimp, Cleaned and De-veined (Buy them pre-done for you)
6 Cloves Whole Garlic
1 lb. Spinach
1 Large Yellow Onion
1 lb. Pasta of Your Choice, Preferably Linguine or Spaghetti
¾ Cup Extra Virgin Olive Oil
Salt to Taste
Pepper to Taste
½ Tablespoon Chili Flakes
Grated Parmesan Cheese

In one pot, boil pasta for 8-11 minutes, strain and set aside.

While pasta is cooking, chop cloves of garlic and onion into tiny pieces. Heat olive oil in a large sauté pan over medium-high heat. Add garlic and onions to oil and stir for 3-5 minutes. Do not burn the garlic! Add shrimp and season with salt, pepper and chili flakes. These will cook very fast. Add strained pasta to pan and toss. Season again with salt, pepper and chili flakes. Add more oil if the pasta looks dry. Add spinach and toss more. It will look like a lot of greens but it will cook down. Taste. Season more if necessary.

Serve immediately and garnish with grated Parmesan cheese.
