| Chicken Pot Pie by Neil Evans |
|
| This is a great miesel to throw together with all the leftovers in your fridge. Be lazy and buy the pre-made pie crusts they sell in grocery stores now to make the crust easy and predictable. If you want to get fancy, buy smaller round baking dishes and make personal pies for a party or just to be unnecessarily cute.
1 lb. Leftover Cooked Chicken, de-boned
Preheat oven to 375 F.
In a large sauce pan combine chicken, cream of chicken soup, frozen vegetables, potatoes and a splash of milk. Season liberally with salt and pepper and stir over medium heat until everything becomes incorporated. About 7-10 minutes.
Place mixture into a pie dish or any baking dish. Cover the top with the pre-made crust and crimp the edges. Bake for 30-40 minutes of until crust become golden brown and flaky. Serve and enjoy.
