Caramelized Apples

by Neil Evans

Ever go apple picking then get sick of eating straight up apples a quarter way through the bag? Yea, me too. Here's a recipe that is quicker than apple pie, just as flavorful as apple crisp and way better is served over French Vanilla ice cream.

5-8 Large Apples, Any Variety, Cored and Sliced into Wedges
½ Cup Sugar
¼ Cup Brown Sugar
3 Tablespoons Butter
1 Tablespoon of Lemon Juice
Pinch of Salt
Raisins (Optional)
French Vanilla Ice Cream (Optional…But Why Not?)

In a large sauté pan, combine all ingredients over medium heat. Simmer until all sugar melts and starts to become a caramel consistency. Stir frequently for about 10-15 minutes or until apples soften. Taste. All Good? Of course it is. Serve hot over French Vanilla ice cream. Lick the bowl.
