Cooking Spree - 1/23/08 to 2/3/08

I had a week and a half off at the end of January and was able to get in the kitchen for some serious stove time. Below are just a few of the meals that were served up.



Caribbean Coconut Soup with Chicken

Sweet and sour, with lime and coconut shreds, the soup was extremly refreshing topped of with chopped cilantro.




Garlic Chicken Thighs, Tapas Style

Liberally seasoned with paprika, salt and pepper, the thighs are pan-roasted with garlic infused olive oil and white wine.



Eggplant Parmesan Soup

This soup is traditional eggplant parmesan personified in a hearty soup. Thickened with seasoned croutons, roasted eggplant andstewed tomatoes, the soup is garnished with a fried eggplant slice and grated parmesan cheese.
