Roasted Cinnamon Acorn Squash


 
1 Acorn Squash
Olive Oil
Salt
Pepper
Cinnamon

Preheat oven to 400 degrees. With a large knife, quarter the squash and scoop out seeds. Place squash on a baking sheet. Drizzle with oil and sprinkle with salt, pepper and cinnamon. Roast in oven for 20-30 minutes, turn squash oven half way through cooking. Squash is done when fork tender.
